Snickerdoodles (Dairy Free!)

We all need a simple, but delicious cookie to fall back on. These snickerdoodles are just that! And if you have a friend or family member who needs a dairy free option, then I’ve got you covered. I personally love using Nutiva Butter Flavored Coconut Oil as my butter substitute for baking. It has a great flavor and really works so well in baked goods!

You can whip these cookies up in no time, and if you have kiddos, these would be great for them to help with! My girls especially love rolling the cookies in the cinnamon sugar mixture. They are chewy, soft, and full of cinnamon. Make sure to give these a try if you love a good, classic cookie!

Ingredients:

  • 1/2 cup coconut oil
  • 1 cup cane sugar
  • 2 tsp vanilla extract
  • 1 egg
  • 2 cups flour
  • 1 heaping tsp cinnamon
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 3 tbsp almond milk or milk of choice
Cinnamon sugar coating:
  • 2 tbsp cinnamon
  • 1/3 cup sugar

Directions:

Preheat oven to 350 degrees. In a large bowl, cream together coconut oil and sugar until smooth. Add egg and vanilla and mix until combined. Then add cinnamon, salt, baking soda, and 1 cup of flour. While mixing add 2 tbsp milk. Lastly, add remaining 1 cup of flour and 1 tbsp milk. Mix until combined. In a separate bowl, mix together cinnamon sugar coating.

Scoop about 1 tbsp of dough out, roll into a ball, toss into cinnamon sugar and line on an ungreased baking sheet. Bake cookies in preheated oven for 8 to 10 minutes or until cookie edges just begin to brown. Let cool and enjoy!
