The Lean Green Bean’s Lentil Muffins

When Aldi released their organic green lentils, I made sure to stock up before they were gone. Most of the recipes you’ll find for lentils are soups. While I love myself a good lentil soup (especially this recipe!), sometimes you just gotta switch things up a little. So when I found a recipe for lentil muffins, I was intrigued to say the least.

These muffins, from theleangreenbean.com have fairly basic ingredients with the odd twist of green lentils! Once cooked and blitzed in a processor, the lentils make a creamy base for the muffins. I did add my own little twist to the recipe as well! The original recipe calls for sugar, which I swapped evenly for organic maple syrup. And instead of the chocolate chips I added raisins! The end result was simply scrumptious.

My kiddos loved snacking on these and I enjoyed a warm muffin with my coffee. The added lentils gave a boost of protein into our diets and kept us feeling fuller for longer! A few other ideas would be to add grated carrots and chopped nuts for a play on carrot cake. Or maybe even throw in some cocoa powder to the original recipe for double chocolate muffins.. Yum!!
