Nana’s Quick Roasted Pecans

I’m back with another pecan recipe! This one comes from Andrew’s Nana, who is a phenomenal cook. Every time we go visit them, she goes above and beyond with delicious food for everyone! You can practically taste the love that she pours into every meal, all the way down to the snacks she keeps on hand! One of those snacks being her quick roasted, salted pecans.

I have always loved snacking on any type of nuts. The crunch, the salt, and they are so filling! Nana’s pecans are usually devoured soon after she puts them out for everyone. I had to get her recipe, and with her permission, share it with y’all! They are so easy and completely addicting. And her secret for getting the salt to stick onto the pecans? Make sure to rinse them first! This recipe isn’t super strict with the ingredients, but it’s the process that counts!

Ingredients:

  • Good quality pecans*
  • Sea salt to taste*

*I usually use 2 cups of pecans and 2 to 3 tsps of salt for that amount.

Directions:

Quickly rinse desired amount of pecans under water then add to a microwave safe bowl. Sprinkle with plenty of salt and toss well. Microwave for two minutes, stir, then microwave for another two minutes. Stir once more then microwave for 1-2 more minutes, making sure not to burn the nuts. Let cool slightly before digging in!
