Savory Squash

Sautéed yellow squash has always been one of my favorite veggie sides. My mom often made it to go alongside pork chops or baked chicken, but it easily goes with any meal! A simple savory recipe that will have your craving squash like you never have before. With only 4 ingredients, this side dish comes together so easily. Just yellow squash, butter or coconut oil, dry minced onion, and salt. That’s it! To make it dairy free, I prefer to use Nutiva Butter Flavored Coconut oil, but any refined coconut oil will work too.

Ingredients:

  • 2 yellow squash, quartered and diced into 1 inch slices
  • 4 tbsp butter or coconut oil
  • 1 tsp dry minced onion
  • 1 tsp salt

Directions:

Heat a skillet or pan over medium high heat. While skillet is heating, prepare your squash. Once pan is heated, add half of your butter or coconut oil then add half of your squash. You do not want to overcrowd the pan. Add half the salt and half the dry minced onion. Stir frequently to prevent burning. Once squash begins to turn golden brown, remove from pan. Add remaining butter or oil and continue with the remaining squash. If pan becomes too dry, you can add more butter or oil. After all squash has been cooked, serve immediately alongside the meal of your choice! This is also great reheated as leftovers the next day. Enjoy!
