Homemade Blueberry Poptarts with Lemon Glaze

Poptarts are such a fun childhood memory! While I love poptarts, I don’t buy them anymore mainly because of the ingredients. We try to stay away from overly processed food, but I do still miss them! So why not make them myself? A friend of mine actually asked if I could try a homemade recipe, and I’m so glad she did! After testing these out a couple times, I’m convinced of their deliciousness.

The recipe itself is very easy and leaves out all of the processed ingredients that we try to avoid. The blueberry filling is slightly sweet and the lemon glaze compliments the blueberries wonderfully. I use Betty Crocker Double Pie crust recipe for the crust. It’s light, flaky, and hold everything together just right. These are also allergen friendly and are egg, nut, and dairy free. Make these for breakfast or as a dessert! You can’t go wrong either way.

Ingredients (Makes 8-10 poptarts):

Blueberry Filling:

  • 1 pint blueberries
  • Juice of half a lemon
  • 1/4 cup water
  • 3 tbsp honey
  • 1 tsp vanilla

Pastry:

Betty Crocker double pie crust recipe
Prepared and rolled out

Lemon Glaze:

  • 1 cup powdered sugar
  • Juice of half a lemon
  • 3 tbsp water

Directions:

To make blueberry filling, combine everything but the vanilla in a sauce pan and stir constantly over medium high heat. The blueberries will burst and the mixture will thicken over time. This will take about 10 to 15 minutes. Once the mixture has thickened, remove from heat and stir in vanilla. Set aside to cool completely.
Preheat oven to 350 and prepare the pastry dough. Once rolled out, cut out *rectangles of the pastry with a knife and place them on a cookie sheet. After filling is cooled, spoon 1-2 tbsp of it into the center of a pastry rectangle then gently place another rectangle on top. Seal the edges by lightly pressing the ends of a fork around the edges. When all poptarts are put together, bake in preheated oven for 30 to 35 minutes or until edges turn golden brown.
Remove from oven and let poptarts cool completely while you mix together the lemon glaze. Then spoon the glaze over the tops of the poptarts and let sit for at least 5 minutes for the glaze to harden.
Serve and enjoy!

*For the rectangle, I trace around the bottom of a small rectangular tupperware.
