Mango Smoothie (with a hidden veggie!)

The warm weather has finally returned here in South Carolina! We went from 40 degree weather one week to 85 degree weather the next. Yep, that’s South Carolina for you. Anyway! The warmth has me craving all the fresh fruit and smoothies again. The girls and I have really been loving mangoes lately so it was only fitting to try a new mango smoothie recipe!

Let me start by saying this was a perfect accident. You see, I keep a smoothie bag in my freezer at all times. Any extra fruit laying around throughout the day get’s thrown into the freezer bag. Things such as half a banana, half an avocado, fruit that’s too ripe to eat, or spinach that isn’t as fresh as I like… All of these things are put into my smoothie bag! Then, the next time we are ready for smoothie, I can easily grab what I would like out of the bag. And this is partly how my mango spinach smoothie came about.

I had quite a bit of avocado in my bag, more than I usually use for a smoothie, but it ended up giving the smoothie a super creamy consistency that more resembled a milkshake. For the liquid, I used a can of coconut milk which just added to the creaminess. Both of my girls (3 and 1) loved their smoothies. Little did they know they were drinking spinach and healthy fats to give them a great start to their day!

Ingredients:

  • 1 frozen banana
  • 1.5 frozen avocados
  • 1 frozen mango, sliced
  • 1 handful of spinach
  • 1 tbsp honey
  • 14 oz. can coconut milk

Directions:

Add all ingredients to a blender and blend until smooth. Pour and enjoy! Serves 2.
