Snack Time!

My Mama’s Olive Butter

We basically live for snacks around here. It’s pretty easy to find sweet snacks such as fruit, muffins, and granola bars that are healthy. But when it comes to salty snacks, the hunt becomes harder. Thankfully, my mama saves the day with this salty and healthy treat! Olive butter.

This olive butter is kind of like a hummus but thicker in texture. We eat it on crackers, pita bread, toast, bagels, or as a veggie dip! It’s so versatile and easy as can be to make. Just throw a couple ingredients into a food processor and you’ve got yourself a snack in minutes. It contains chickpeas which are full of protein and fiber. Both of my girls are obsessed with this as a dip. My youngest even prefers to just like it off of her cracker!

Ready for the recipe?

Ingredients:

  • 1 can chickpeas or garbanzo beans, drained and rinsed
  • 1 jar green olives, drained
  • 1-2 tbsp olive oil
  • 1 tbsp fresh parsley or 1 tsp dried parsley

Directions:

Place all ingredients into a food processor and blend until smooth. Feel free to add more olive oil if you like a thinner consistency. Enjoy!

Homemade sourdough crackers are my favorite combo with olive butter!
