Crockpot Minestrone Soup

It’s soup season! And you can never have too many delicious soup options. I recently made a crockpot minestrone soup that turned out wonderfully. If you’re wondering what minestrone soup is, it’s basically just an Italian vegetable soup. I love that it is loaded with veggies and the added noodles just makes it even more filling.

*Bonus* this recipe easily feeds a crowd and makes ALOT. If you end up with more than you need, let the soup cool and freeze it! Freezing soups is so easy and you’ll thank yourself later on a day that you don’t feel like cooking.

Don’t be afraid of the ingredient list. Though it’s a little lengthy, you basically just throw almost everything into the soup and let it do it’s thing. The soup is so loaded with flavor that even my kids (4 and 2 years old) loved it! I used macaroni noodles to include something familiar for them, but feel free to use any noodle you like!

Ingredients:

  • 1/2 lb baby potatoes, quartered
  • 1 large green pepper, diced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 celery stalks, diced
  • 2 cup carrots, chopped
  • 1 tsp dried basil
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1 tsp dried thyme
  • 1/4 tsp crushed red pepper
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cups water
  • 28 oz can diced tomatoes
  • 14 oz can tomato sauce
  • 4 cups vegetable broth

    To be added 15 minutes before serving:
  • 15 oz can red kidney beans, drained
  • 15 oz can cannellii beans, drained
  • 1 large zucchini, diced
  • 1 cup frozen green beans
  • 1.5 cups macaroni noodles, cooked according to package

Directions:

Add first list of ingredients to crockpot and stir together. Set crockpot on low for 6 to 8 hours. 15 minutes before serving, turn the crockpot to high and add beans and zucchini. Let cook while preparing your noodles. Add noodles into soup right before serving. Enjoy!

*When reheating, add a splash or so of water if needed!
