Mint Chocolate Cookies

Christmas, Christmas time is near! Time for mint chocolate cookies and Christmas cheer!
Ok, so maybe the song doesn’t go quite like that, but it does in my home! Every year I love filling our home with a variety of Christmas cookies. And these mint chocolate cookies are always a staple.

You can use Andes mints or this year I also used creme de mint chips from Aldi. Both work wonderfully and give you that delicious mint chocolate flavor. The recipe itself is very easy to mix together and they only take 10 minutes to bake! You’ll be wanting to take these cookies to every gathering, they’re such a crowd pleaser!

Ingredients:

  • 1.5 cups cane or white sugar
  • 1 cup room temperature unsalted butter
  • 2 eggs
  • 2 tsps vanilla
  • 2 cups flour
  • 2/3 cup cocoa powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1.5 cups andes mint chips

Directions:

Preheat oven to 350. Combine sugar, butter, eggs, and vanilla in a large bowl until creamy. Add flour, cocoa powder, baking soda, and salt until just combined. Fold in andes mint chips. Scoop out cookie dough balls with a cookie scoop (or about a tbsp of dough) and place on a baking sheet lined with parchment paper. Bake for 10 minutes then let cookies cool slightly before transferring to a cooling rack. Enjoy!
