Immune Boosting Lentil Soup

Remember those organic lentils I posted about? I am finally getting around to trying some new recipes with them! I’ll be sharing our favorite lentil soup recipe shortly, but first I wanted to share a new recipe I found.

Look. At. All. Those. Veggies.

This immune boosting lentil soup was so filling and packed full of nutrients. Best of all? It’s a crockpot soup! This makes it a great meal to come home to after a long day. We enjoyed it Sunday evening after being at church for the day, and it was a great end to a long weekend.

To make things even easier on myself, I bought a bag of frozen organic butternut squash from Aldi and threw that in the crockpot about 30 minutes before it was finished. Cutting up butternut squash can be a pain, so this saved me a lot of time.

For even more of an immune boost, I used seven cups of vegetable broth and three cups of turkey bone broth. Bone broth is amazing for your health, and Aldi just so happens to sell organic bone broth for those of us who don’t have the time to make it ourselves. Or are just too intimidated by it (eh hem, me.)

I served ours with a side of homemade sourdough bread for dipping. My youngest (1) loved the soup and my 3 year old mostly enjoyed dipping her bread into it. But she still ate it even with the “salad” in it (as she said), so I would say this was a successful family meal!
