Blueberry Avocado Smoothie

Rise and shine! Starting out a new week can be hard. We all get the Monday blues, right? But it doesn’t have to be that way! When the Mondays have me feeling down, I refuel with a smoothie. A blueberry avocado smoothie to be exact.

I’m guilty of hopping on the “avocados make everything better” bandwagon, but in this case it really is true! The blueberries do a great job of masking any avocado taste, and the texture becomes velvety smooth. Best of all, you get a healthy dose of good fats to get your day started and keep you feeling fuller for longer.

One more thing… throw in a handful of spinach for some extra veggies and neither you nor your kids will even notice them!

Ingredients: (serves 2)

  • 1/2 avocado, fresh or frozen
  • 1/2 frozen banana
  • 1 cup frozen blueberries
  • 1 handful of spinach
  • 1 tbsp honey (preferable raw and local!)
  • 1 – 1.5 cups unsweetened plain almond milk

Directions:

Throw everything into a blender and blend until smooth! Feel free to adjust the amount of milk depending on how thick/thin you would like your smoothie.

Need something more filling? Try a smoothie bowl instead! Decrease the amount of liquid when blending to create a thicker smoothie. Pour into a bowl and top with fruit, granola, chia seeds, extra honey, or whatever you would like!
